I have been working on a couple of coconut favorites, still struggling but I think I've got it. I just need a stronger coconut flavor. I actually have 2 that will be going to be on the menu, one is the Tropicalada, (pineapple, coconut, banana, and strawberries) and the other is going to be The Toasted Nut, (Coconut ice pop dipped in chocolate and rolled in toasted coconut). YUM!!!! I think these are going to be big hits with coconut lovers.

I guess I do love coconut!!!

Pina Colada Smoothie

I knew I hated coconut! I tried to make kind of a Pina Colada ice pop but it turned out NASTY!!! The blended stuff was delicious but something happened during the freezing process. I used coconut milk, crushed pineapple, pineapple juice, banana, and coconut flakes. As a smoothie it couldn't have been better, rich, smooth, creamy, and delicious. After it was frozen it was grainy and not much flavor. It also fell apart when trying to remove it from the mold. I will have start over from scratch. Here is the recipe for my Pina Colada Smoothie

Here is the recipe for my delicious (by accident) "Pina Colada" Smoothie

2 c crushed pineapple

2 c coconut milk (I used vanilla flavored full fat)
½ c of pineapple juice

½ of a banana

½ cup sweetened coconut flakes

4 teaspoons sugar
(Add rum if desired)

Throw it all in a blender and blend until smooth and creamy approx 45 seconds. Makes approx 4 - 8oz servings.

Yesterday was a huge success! I was able to perfect my Blueberry Lemonade, Peanut Butter -Chocolate, Cucumber Refresher, and my Kiwi Pineapple; they were all excellent flavor combinations. The fruity pops were a lot easier to get out of the molds. I was very surprised the Peanut Butter Chocolate ice pop turned out so delicious I admit was a bit of a skeptic. Imagine them dipped in chocolate double delicious.
